A Green Egg Celebration {GF/DF}

Happy Birthday Dr Seuss!
We will be celebrating today with some green egg mini cakes in your honor.

These mini cakes were a cinch to put together. The base was created using a Wilton Round Cookie Treat pan and the 'yolk' with a Wilton Silicone Brownie Pop Mold.

Fill the Round Cookie treat pan with plain cake mix. My son has several food allergies so I used a Gluten Free ~ Dairy Free batter {that's why the appearance may look a little different}.


Scoop out about a cup of batter and stir in a few drops of green food coloring to create the 'yolk'. You only want to fill the brownie pop mold about 1/3 full. {The clumps you see are just the vegan butter ~ it doesn't mix very well}

Once baked, ice the base with white icing and top with your 'yolks' {the icing will hold them in place}. I have included a simple Gluten Free ~ Dairy Free Icing recipe that I use below.

GF/DF White Icing
1 1/2 Cups of Sugar
1/2 Cup of Water
1/2 Teaspoon Cream of Tarter
3 Egg Whites
1 1/2 Teaspoons Vanilla
*Check the manufacturing brands to ensure you are using true GF/DF products and any risks of cross contamination.
Combine sugar, water and cream of tarter in a sauce pan. Cook until sugar is dissolved and the mixture starts to bubble.
In a separate bowl, combine egg whites and vanilla. Gradually add the sugar mixture to the egg whites a little at a time, beating constantly. Continue beating until stiff peaks form. Refrigerate for 30 minutes prior to frosting.

This is a great idea & cute too! When my kiddos were younger we would make "Green Eggs & Ham" for dinner on St. Patrick's Day (also because we loved Dr. Seuss). We aren't Irish, but it was a fun way to celebrate.
