'Best Bites' Baked Creamy Chicken Taquitos

I admit, the only other taquitos I ever ate were those from a pre-packaged frozen bag that you pop in the microwave for 30 seconds, back in the day. Quick? Yes ~ Delicious? Not, especially compared to this homemade recipe I found over at Best Bites. Best part is you can pre-make the filling ahead of time making this a quick and easy week-night dinner.

Baked Creamy Chicken Taquitos
Ingredients Needed:
1/3 Cup Cream Cheese {3 ounces}
1/4 Cup Green Salsa
1 Tablespoon Lime Juice
1/2 Teaspoon Cumin
1 Teaspoon Chili Powder
1/2 Teaspoon Onion Powder
1/4 Teaspoon Garlic
3 Tablespoons Chopped Cilantro
2 Tablespoons Sliced Green Onions
2 Cups Shredded Cooked Chicken
1 Cup Grated Cheese
{I use a fiesta blend of Monterey Jack, Cheddar, Queso Quesadilla & Asadero Cheese}
Small Corn Tortillas
Kosher Salt
Cooking Spray

To prepare my chicken, I boil 3-4 boneless chicken breast halves on the stovetop in water until completely cooked. This makes shredding them super easy and if cooked long enough you can simply shred them with a fork. Set aside and preheat your oven to 425 degrees. Line a baking sheet with foil and lightly spray with cooking oil.

To make the filling, soften the Cream Cheese in the microwave for 30 seconds. Combine the Cream Cheese, Green Salsa, Lime Juice, Cumin, Chili Powder, Onion Powder, and Garlic. Mix well.

Add in the Cilantro, Green Onions, Chicken and Cheese; mix well. This filling can be prepared ahead of time and kept refrigerated until ready to use.

Working with three tortillas at a time, heat them in the microwave for 30 seconds just to soften them enough to roll without cracking.

Spoon 2-3 Tablespoons of the the filling on the lower third of the tortilla, keeping it about 1/2 inch from the edge.

Roll it up as tightly as you can and place on the baking sheet, seam side down.

Spray the tops with a light coat of cooking spray and sprinkle some kosher salt on top. {make sure your taquitos are not touching each other} Bake in the oven for 15-20 minutes or until crisp and the ends start to get golden brown.

We like ours crispy brown and served with sour cream. {yummy} Enjoy!

I've been wanting to try these for a while now (love OBB!). In fact, last night I was planning on making them for dinner but then my husband looked at my like I was a crazy person and said "Taquitos? For DINNER? Really?" So I opted for something else. But now. I think he'll have to try them :)
