Cheerios Crust Mini Cheesecake Bites Recipe

A couple of months ago I had the pleasure to work with General Mills as they recognize their fans for helping make Honey Nut Cheerios America’s Favorite Cereal.

We celebrated by having a fun outdoor breakfast bash that brought out the kid in everyone who attended. General Mills generously provided games to play, recipes to share and, of course, America’s favorite cereal to enjoy along with a bunch of buzz worthy goodies.

Everyone left with a few take away boxes of Honey Nut Cheerios to enjoy and I have been having fun trying out some new recipes with mine. Not only are they perfect for breakfast, and a hit with the little ones, they also contain soluble fiber from whole grain oats – a great alternative to sneak into some all time favorite recipes. I thought the addition of the honey and almond combination would make a tasty crust so I made some super easy no-bake mini cheesecake bites to share today.

Cheerio Crust Mini Cheesecake Bites
Ingredients Needed:
3 Cups of Honey Nut Cheerios
1/4 Cup of Brown Sugar
1 Stick of Butter {melted}

12 Ounces of Cream Cheese {1 1/2 packs}
4 Ounces of Sweet Condensed Milk
1 Teaspoon of Sugar
1 Teaspoon of Vanilla
1 Teaspoon of Lemon Juice

Crush the Cheerios in a food processor – or place in a large resealable plastic bag and crush with a rolling pin.

Mix crumbs with the brown sugar in a medium bowl and stir in the melted butter until well combined.

Line a mini muffin pan with liners and press in the crumb mixture, spreading it up the sides of the liner. Chill in the freezer while the filing is prepared.

To make the filling, beat the cream cheese with a hand mixer on medium-high, until smooth. Slowly pour in the condensed milk then add the sugar, vanilla, and lemon juice.

Scoop the mixture into the mini crusts and refrigerate until firm, 2-3 hours.

This recipe makes approximately 24 yummy mini bites.
