Homemade Caramelized Onion Dip Recipe with Carapelli Olive Oil

With the holiday party season quickly approaching, it’s time to hit the kitchen and start gathering your quick and easy appetizer recipes. One of my favorite savory go-to’s is Caramelized Onion Dip as it is simple and convenient to put together – plus budget friendly if you’re serving a large crowd.

If you have ever caramelized onions you know there is really not much to it other than a little patience – Though using a premium olive oil when sautéing is key to enhancing the onions amazing natural flavor. Olive oil is an essential staple in my kitchen so I was pretty thrilled when Carapelli sent over a few bottles to sample. Caramelized Onion Dip

Ingredients Needed:

3 Tablespoons of Premium 100% Italian Extra Virgin Olive Oil

2 Large Onions {peeled, halved and sliced}

1 Teaspoon of Salt

1/2 Teaspoon of Thyme

1/2 Cup of Sour Cream

3 Ounces of Cream Cheese

1/3 Cup of Mayonnaise

1/3 Cup of Grated Parmesan Cheese

1/4 Teaspoon of Worcestershire Sauce

Fresh Ground Black Pepper

1. Heat olive oil in a pan on medium high heat then add onions, thyme, and salt. Stir to combine and cook for 10 minutes.

2. Reduce heat to low and cook the onions 20 to 25 additional minutes – stirring occasionally until golden brown. Remove from heat.

3. Mix the remaining ingredients together in a separate bowl until well blended – then add the caramelized onions.

4. Serve immediately warm or chill in the refrigerator for 1 hour to serve cold.

Since color is never an indicator of the quality of olive oil, there are a few quick steps you can preform to taste test the oil – similar to tasting wine.

1. Swirl – By swirling the olive oil in your glass, you release the oil’s esters, which are the molecules that contain the aroma.

2. Sniff – Now inhale deeply. The aroma is the key to the fruitiness of the oil. Is it intense or is it more subtle?

3. Slurp – Sip the oil while “sipping” in a bit of air. This slurping action emulsifies the oil and helps spread it throughout your mouth. Take note of the various tastes and sensations. Is it fruity, peppery, smooth?

4. Swallow – Once you swallow the oil, it should leave your mouth with no aftertaste. Again, take note of any peppery or stinging sensation in your throat.
