One of our holiday traditions is a Family Christmas Morning Breakfast/Brunch. We rotate who is going to host each year between my sisters, brother and myself. {I just love gathering together before the days festivities and seeing the excitement Santa has left behind in the kiddies eyes}

Ok, I’m not typically a ‘leave a comment’ kind of girl…however the comment from anonymous prompted me to put my 2 cents in. I owned a health food store and REAL food is a passion of mine. I’ve spent many thousands of hours doing research on what is truly healthy…not what the media/food manufacturers/big pharma would like us to believe. I’m assuming that ‘anonymous’ is referring primarily to the eggs in most of the recipes, but most likely some of the other ingredients as well. I would agree that those recipes offered up by Kraft or Betty Crocker probably call for some of their processed foods and I would skip those and make my own stuffing/biscuits etc. Other than that this is an amazing collection of special occasion casseroles. Pick organic ingredients when you can, use real maple syrup instead of the maple flavored sugar stuff they sell, nitrate free bacon would be cool. But most of all remember that preparing and eating food should be a joyous and love fill event. Good, whole, real food is not the enemy, eggs DO NOT give you high cholesterol, good fats like BUTTER are brain food, and anyone that tells you otherwise is either uninformed or has an agenda. Ok, getting down off the soap box now…

looking for a baked casserole that was described by server as swiss pancake. had no cheese or veggies. was custard like but also somewhat like yorkshire pudding in look. it was light like souffle but slightly denser.
