Malibu “Mommy” Cupcakes featuring Duncan Hines {rum infused cupcake recipe} #CleverDessert #spon

The season’s festivities really are not complete without some tasty decadent desserts – and we all know this time of year ‘us girls’ really can’t resist some sweets {and possibly a drink or two}.

So when I was given the opportunity to work alongside Duncan Hines, I thought why not combine the two for a little Mommy indulgence … with some Rum Infused Malibu Cupcakes.

Duncan Hines does most the work for this one girls and the icing is as easy as can be.

So whether your hosting a soiree, casual get-together or simply having the girls over for a night in – these cupcakes don’t take much time to prepare and are sure to appeal to your adult guests.

Ingredients Needed for Cupcakes:
Duncan Hines Classic White Cake Mix
3 Large Eggs
1 1/3 Cup of Water
2 Tablespoons of Vegetable Oil
1 Teaspoon of Vanilla Extract
1 Teaspoon of Malibu Rum

Ingredients Needed for Icing:
1 and 3/4 Sticks of Unsalted Butter {softened}
8 cups of Confectioners Sugar {10X sugar}
1/4 Cup of Milk
1/4 Cup of Malibu Rum
1 Teaspoon of Vanilla

Mix the Duncan Hines Cake Mix as directed on the package, with eggs, water and vegetable oil.

Once completely combined, stir in the vanilla and rum ~Bake as directed.

For the icing: mix the softened butter and vanilla with an electric mixer on low for one minute.

Continue mixing on low speed and add the milk and rum.

Gradually add in 6 cups of the confectioners sugar until the mixture is creamy.

Continue to add last two cups of sugar until a thick creamy consistency is achieved.

It’s ok to to break out the extra large cupcake pan for this recipe….

and pile the icing high.

You don’t really even need a reason to celebrate
– as being a Mommy is good enough this time of year!

  12. I absolutely love rum cake. Malibu rum has such a mild flavor I can’t imagine there being a very strong rum/coconut flavor here. Thank you for posting the recipe. It will be great for those who don’t think that they would like much of a rum flavor. I will definitely make it. We do like it stronger, so I’ll start with your recipe (can’t top something being box easy). My scratch recipe calls for rum as the entire liquid, so I think I’ll sub 3/4c of the water with regular rum (for the stronger rum flavor) and coconut extract for the vanilla.

    • how did it come out with your changes to the amount of alcohol? I will be making them for the first time and I want them to be strong

  13. I’m going to make these for a party and sprinkle toasted coconut on top! Maybe poke a few holes and sprinkle extra rum before I ice them! Hmm the possibilities!

  19. This looks great! I wonder if you could sub the water for coconut water or coconut milk? Add a bit of shredded coconut to the frosting and yum!!

  23. these look amazing…I love the Duncan Hines range…im going to make these but substitute everything in the cupcakes for a cup of lemonade…that it..2ingredients…( for this recipe 3 including the Malibu rum)…the box of cake mix and a cup of lemonade…u can use diet lemonade if u prefer…they are the lightest…moistest cupcakes u will ever have…

    ps…if youre not confident with the icing…Duncan Hines has a fantastic range of ready to use icing tubs…..
