Sweet Tea Brined Fried Chicken

Ingredients
Brine
  • 4 Cups of Gold Peak Sweet Tea, approximately two 16.9 ounce bottles
  • 1 Small Onion, thinly sliced
  • ¼ Cup of Kosher Salt
  • 2 Cloves of Garlic, minced
  • Fresh Ground Pepper
  • 4 Cups of Ice
Fried Chicken
  • 3 Pounds of Chicken
  • 3 Cups of All Purpose Flour
  • 3 Tablespoons of Season All
  • 1½ Cups of Buttermilk
  • ⅓ Cup of All Purpose Flour
  • 2 Egg Yolks
  • Fresh Ground Pepper
  • Canola or Peanut Oil
Instructions
Brine
  1. Combine the sweet tea, onion, salt and garlic in a large saucepan and simmer on the stovetop for 5 minutes, stirring until the salt is completely dissolved.
  2. Remove the pan from the heat and add in the ice. Set aside to cool completely.
  3. Place the brine mixture into a large plastic bag, add in the chicken and seal.
  4. Set the bag in a bowl and refrigerate for at least 4 hours, up to 24 hours.
Fried Chicken
  1. Remove the chicken from the brine and pat dry paper towels. Set aside, at room temperature for 30 minutes.
  2. In a large bowl, combine 3 cups of flour and the season all.
  3. In a separate bowl, combine the buttermilk, ⅓ cup of flour, egg yolks and pepper.
  4. Heat the oil in a deep fryer to 300°F.
  5. Dip the chicken into the dry flour mixture. Shake off the excess flour, dip in the buttermilk mixture, then back into the flour mixture.
  6. Carefully place the chicken into the fryer, making sure not to overcrowd the pan. This may require a couple separate batches of frying.
  7. Fry the chicken, completely submerged in the oil, for 15-18 minutes - or until the internal temperature reaches 165°. Keep in mind white meat will cook faster then dark meat.
  8. Remove the fried chicken and place on paper towels to drain.
  9. Serve or cool to room temperature and place in the refrigerator for up to 24 hours.

Baked Three-Cheese Macaroni

Ingredients
  • 1 Pound Box of Barilla Macaroni
  • 3 Tablespoons of Unsalted Butter
  • 3 Tablespoons of All Purpose Flour
  • 3 Cups of Milk
  • 1 Teaspoon of Onion Powder
  • 1 Teaspoon of Garlic Powder
  • ⅛ Teaspoon of Cayenne Pepper, or more to taste
  • Kosher Salt and Fresh Ground Pepper, to taste
  • 8 Ounces of Extra Sharp Cheddar Cheese, shredded
  • 8 Ounces of Asiago Cheese, shredded
  • 4 Ounces of Parmesan Cheese, shredded
  • Fresh Parsley, chopped
Instructions
  1. Heat the oven to 350° F.
  2. Bring a large pot of lightly salted water to a boil, then stir in pasta. Cook for 7 minutes then drain.
  3. Melt the butter in a large saucepan over medium heat. Whisk in the flour. Continue whisking until the roux gently bubbles, about 2 minutes. Slowly add the milk, a little bit at a time, whisking until smooth between each addition. Once the roux forms a thin paste, whisk in the remaining milk. Bring the mixture to a boil over medium-high heat, then reduce to a simmer and cook for 10 minutes.
  4. Remove the pot from the heat and add in the onion powder, garlic powder, cayenne pepper, salt and pepper.
  5. Working with about one cup of cheese at a time, add a combination of the cheddar, asiago, and parmesan cheese to the mixture - Whisk until smooth between each addition. (reserve a small amount of cheese to sprinkle on top before baking)
  6. Pour the cheese sauce over the cooked penne and mix well to coat the pasta.
  7. Spoon the macaroni into a 2 quart baking dish or individual ramekins, lightly coated with cooking spray. Sprinkle with reserved cheese and fresh parsley.
  8. Bake for 20 minutes, or until the top is lightly brown.

Serves: Serves 6 - 8
Ingredients
  • 1 Pound Box of Barilla Rotini
  • ½ Cup of Red Onion, diced
  • 3 Tablespoons of Red Wine Vinegar
  • ½ Teaspoon of Oregano
  • 8 Ounces of Sliced Provolone Cheese, cut into squares
  • 7 Ounces of Salame Portofino, cut into squares
  • 4 Ounces of Sun Dried Tomatoes, packed in oil, chopped
  • ¼ Cup of Fresh Parsley, chopped
  • 2 Tablespoons of Extra Virgin Olive Oil
  • Fresh Ground Pepper
Instructions
  1. Bring a large pot of slightly salted water to a boil, then stir in pasta. Cook for 7 minutes then drain and rinse under cold water.
  2. Combine the red onion, red wine vinegar and oregano in a nonreactive bowl. Add in the cooked pasta and toss to combine.
  3. Add in the remaining ingredients. Toss to evenly combine.
  4. Serve at room temperature or make up to 24 hours in advance and refrigerate.
