Nothing like a quick and easy ice cold treat to cool you down on a hot summer day. As a kid freeze pops were a summertime staple ~ we loved them and my mom always had them on hand. This year is a challenge for me since my son has been diagnosed with several food allergies {wheat, dairy, beef, and peanuts to be exact} leaving a very limited number of foods in his diet. With Easter being commercially known for chocolates and sweets I am left on my own to create a few tasty treats that are fun. I admit a lot are trial and error however this one is a keeper. A Green Egg Celebration {GF/DF}

Happy Birthday Dr Seuss! We will be celebrating today with some green egg mini cakes in your honor. These mini cakes were a cinch to put together. The base was created using a Wilton Round Cookie Treat pan and the 'yolk' with a Wilton Silicone Brownie Pop Mold. Fill the Round Cookie treat pan with plain cake mix. My son has several food allergies so I used a Gluten Free ~ Dairy Free batter {that's why the appearance may look a little different}.
